My cooking mentor gave me a challenge of making stuff with out fruit. he told me to focus on nuts, herbs, and vinaigrettes.
also chicken (butterflied), and Mushtoom duxelle.
So how about the dish? Give me more ideas. tell me what u think. thanks

Monday, August 17th, 2009I’m making Rachael Ray’s Veal Meatball and Broccoli Rabe ‘Stoup’. My local market didn’t have ground veal. I have ground chicken, pork and beef. What could I use to replace the veal- one of the meats I have, or maybe a mixture? The recipe for the meatballs included parmesan cheese and fresh sage- the broth is a mixture of beef and chicken stock.
